Pak Choi / Chinese Cabbage:
Sow in open ground in rows from mid-July to the end of August, thinning out in rows. Do not transplant! Seed stalks easily form if sown and transplanted too early.
Pak Choi can be stir-fried, blanched very briefly in boiling water, or stewed. It can be prepared as a wok vegetable with a wide variety of ingredients; stewed leaves are used as a filling for spring rolls, and the core of the pak choi is eaten raw.
