This relative of the Goosefoot originates from the grassy steppes of southern Russia and from there, through immigration, ended up in the prairies of Central America. The ornamental and edibility compete for priority in this fine-leaved, cuddly, conical plant (60-90 cm high). The leaves and young shoots are very tasty and are briefly boiled or stir-fried. The name “Land Caviar” is given to the plant by the edible seeds, which resemble caviar in appearance and texture; in Japan it is a delicacy and is called “Tonburi”. The seeds are dried, boiled and then soaked in cold water for a day. They are then rubbed by the hands to remove the outer skin, leaving behind the shiny green seeds. The herb contains some Saponin (less than in beans), so do not eat plates full of it. Native Americans used this property to temporarily stun fish, which are sensitive to Saponin. In the fall, the light green plants turn a beautiful autumn red and in the windy prairie the well-known Tumbleweed, dry wigs, that roll through dusty streets, appears...: the seeds are spread by this tumbling of the plant. Sheep are crazy about this plant and other green eaters will also enjoy it. Finally: the leaf and the seeds have many medicinal properties: anti-bacterial and anti-fungal.
